¼ cup melted butter

½  package of softened cream cheese

1 teaspoon minced garlic

½ cup milk

5-6 chopped sun dried tomatoes

5-6 chopped artichoke hearts

½ chopped onion

¼ cup grated parmesan cheese

¼ teaspoons black pepper

1 pizza crust

1 tbspn EV olive oil

1 cooked and chopped chicken breast (seasoned with pepper & salt)

1 cup fresh baby spinach leaves, sliced

½ cup mozzarella cheese, Thinly Sliced

Sprinkle of Oregano, Thyme, and Basil

For the Sauce:

Melt butter in a saucepan over medium heat.

Add cream cheese and garlic and then after15-20 second stir in the milk.  Smooth out all lumps

Stir in parmesan and pepper.

Stir for 2 minutes and remove from heat.

(Thin with more milk if needed)

Add in chopped sun dried tomato, artichokes and onion in sauce.

For the Pizza:

Preheat your oven to 425 degrees.

Rub olive oil on outside crust of pizza

Sprinkle edges with oregano, basil, thyme, salt and pepper.

Spread the sauce over the pizza dough, leaving about 1/4 inch around the outside edge for the crust.

Spread the spinach, chicken, and mozzarella evenly across the crust.

Sprinkle again with oregano, basil, thyme,

Place the pizza into the oven and bake for 12-14 minutes or until the crust edges are golden and the cheese is melted.

Allow it to cool for a few minutes so that the cheese has time to set.

Slice pizza and ENJOY!

Day 19: thankful when my husband cooks

I’m thankful when my husband cooks! Although I love being in the kitchen and creating meals that he enjoys –  It’s nice to come home from work with a hot yummy favorite meal sitting on the table.  I love chicken and pasta! My husband makes the best!  He adds a little fresh onion, red pepper flakes, and a his special ingredient (which for 4 years I didn’t have a clue what it was – black pepper, ha) Sometimes the simplest things are the most thoughtful.
