¼ cup melted butter

½  package of softened cream cheese

1 teaspoon minced garlic

½ cup milk

5-6 chopped sun dried tomatoes

5-6 chopped artichoke hearts

½ chopped onion

¼ cup grated parmesan cheese

¼ teaspoons black pepper

1 pizza crust

1 tbspn EV olive oil

1 cooked and chopped chicken breast (seasoned with pepper & salt)

1 cup fresh baby spinach leaves, sliced

½ cup mozzarella cheese, Thinly Sliced

Sprinkle of Oregano, Thyme, and Basil

For the Sauce:

Melt butter in a saucepan over medium heat.

Add cream cheese and garlic and then after15-20 second stir in the milk.  Smooth out all lumps

Stir in parmesan and pepper.

Stir for 2 minutes and remove from heat.

(Thin with more milk if needed)

Add in chopped sun dried tomato, artichokes and onion in sauce.

For the Pizza:

Preheat your oven to 425 degrees.

Rub olive oil on outside crust of pizza

Sprinkle edges with oregano, basil, thyme, salt and pepper.

Spread the sauce over the pizza dough, leaving about 1/4 inch around the outside edge for the crust.

Spread the spinach, chicken, and mozzarella evenly across the crust.

Sprinkle again with oregano, basil, thyme,

Place the pizza into the oven and bake for 12-14 minutes or until the crust edges are golden and the cheese is melted.

Allow it to cool for a few minutes so that the cheese has time to set.

Slice pizza and ENJOY!

1 cup pancake mix

1 egg

¾ cup milk

1 tablespoon veggie oil

½ tablespoon vanilla

1 teaspoon cinnamon

2 bananas (1 mashed for in mix, 1 sliced for on top)

1 cup walnuts (1/2 chopped for in mix, ½ on top)

 (Syrup and butter)

1) Mix all ingredients together

2) 325 degrees on a skillet, (Makes about 5 pancakes) once bubbles start to form, its time to flip

3) Serve with banana slices and walnuts on top



BBQ Chicken, Apple, Bacon and Cheddar Quesadillas 800 3871

Quesadillas with BBQ chicken, fresh apple slices, bacon and plenty of melted cheddar cheese.

2 (10 inch) tortilla
1/2 cup cheddar cheese, shredded
1 cup chicken, cooked, shredded and warm
2 tablespoons BBQ sauce
1/4 of a onion, chopped
1/4 apple, chopped
4 slices bacon, cooked and crumbled
extra virgin olive oil

(add jalapeno for a kick!)

  1. Chop all filling ingredients and put in a mixing bowl.
  2. Add BBQ sauce to the mix – don’t add too much. You can always dip!
  3. Lightly spray EVOO on the outside of the tortilla and put sprayed side down in a pan on medium heat.
  4. Put filling mix on half the tortilla.
  5. Once tortilla starts to brown, fold the tortilla in half covering the filling and cook until the tortilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side.
  6. ENJOY!




4 large baking potatoes (or use leftover baked potatoes)
2/3 cup all-purpose flour
6 cups 2% milk
3/4 cup cheddar cheese
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 cup reduced-fat sour cream
1/2 cup chopped green onions


Cheddar Cheese, shredded
Green Onions, chopped
Bacon, cooked and crumbled


1. Preheat oven to 400 degrees F. Pierce potatoes with a fork; bake for one hour or until potatoes are tender. Let the potatoes cool. Peel potatoes and coarsely mash them in a small bowl. Set aside.

2. In a large soup pot, add the flour. Gradually whisk in the milk, whisk until smooth. Cook over medium heat until thick, about 8 minutes. Add mashed potatoes, cheese, salt, and pepper. Stir until the cheese melts.

3. Add in sour cream and green onions. Cook over low heat until thoroughly heated, do not boil the soup. Ladle soup into bowls and garnish with toppings. Serve warm.
